Simple Homemade Fresh Fruit Tart With Vanilla Pastry Cream

What says summer better than a fresh fruit tart!? When my Mom asked for a fruit tart for her birthday, I couldn't have been more excited to create a birthday dessert that was not a cake! Using sweet fresh fruit layered on top of a cool, creamy, custard-like pastry cream, all encased in in a rich, flaky, buttery pie crust and finished with an optional light fruity glaze, this is the ultimate summer treat... even for the ultimate CHOCOLATE LOVER like me! I could seriously eat this for breakfast and justify that fully... it does have fruit in it ;)

Classic Vanilla Pastry Cream (with tons of flavor variations!)

Pastry cream... smooth, luscious pastry cream. This rich, thick, creamy custard is easily made from a mixture of milk, eggs, sugar, cornstarch or flour. I like to use half & half in place of milk, only the yolks  and add a pinch of salt, some butter and vanilla extract to really amp up the flavor for an extra rich pastry cream!

Individual Mini Lemon Meringue Pies {Small Batch - Yield 6 mini pies}

After my miniature fruit pies took Pinterest by storm, I knew I just had to re create my festive mini pies in a summertime flavor. These individual portions of smooth lemony filling in a tender flaky crust are finished with a delicate cloud of meringue topping. They are so incredibly delicious and gourmet tasting yet actually pretty simple to make. The adorable mini size makes not only an impressive presentation but yet another way to indulge in moderation using my small batch recipe for this classic dessert. The best part is there's no messy cutting with filling oozing out because each pie is perfectly portioned for a single serving treat.

"Apple For The Teacher" Hand Pies, Frosted and Stuffed With PB&J

Summer is coming to an end and school is back in session, which means time for some fun "Back to School treats"! This year, I was honored to be asked amongst a number of popular dessert bloggers to to participate in the 2012 Back to School Bake-off, hosted by Best Friends for Frosting and Sprinkles & Grins, a website brought to you by Betty Crocker& Cake Mate. We were asked to produce a unique and exciting new recipe or sweet treat that represents "back to school" to us, to inspire you! My first thoughts were "Apple for the teacher" and PB&J, so I knew I had to think of a way to combined the two ideas... and that is how I came up with my "Apple For The Teacher" Hand Pies, Frosted and Stuffed With PB&J. A perfect back to school treat for kids, teachers, friends and classmates.

Lemon Meringue Pie Dip For Two

For when you don't want to bake an entire pie, this pie inspired, refreshing treat is really simple to make and only needs about 10 minutes in the oven! The luscious, smooth lemon curd is topped with a light, fluffy cloud of meringue topping. Instead of a crust, scoop with cookies or graham crackers for a quick, simple and delicious summer time treat for two. Make it in a bowl to share or in 2 ramekins to serve as individual, single serving desserts! Alternatively, you can sub the meringue topping for a "lite" store bought whipped topping and use low sugar/reduced fat cookies, to guiltlessly indulge in moderation with my small batch, summer time take on a classic dessert.

Homemade Classic Pumpkin Pie

I love to use pumpkin in baking, like my Pumpkin Pancakes, Spiced Pumpkin Seed Brittle, Pumpkin Cupcakes, Pumpkin Caramels, Pumpkin Fudge, and most of all my pumpkin cheesecake! Now, my Pumpkin Pie Bites, I really liked, probably because the ratio of crust to filling is much more my taste. But I have found a way to incorporate more crust into each slice, on top of light maple spiced whipped cream, and still have a flavorful, rich, creamy pie with warm, fragrant autumn spices in a buttery flaky crust underneath it all.

Homemade Apple Pie Spice

After posting a poll on our Facebook page asking what your favorite Fall flavors are, apple was such a close second to pumpkin, that I decided to share my homemade apple pie spice with you. This spice blend is pretty similar to my pumpkin pie spice blend with a few minor tweaks to really bring out the warm cinnimon and nutmeg. It is the perfect for Autumn baking, Thanksgiving pies and cobblers, and Holiday desserts. Stay tuned for some fun recipe I will be using this spice blend in this month, like apple pie spiced caramels, apple crisp, peanut butter caramel filled apples, and many more!

Individual Apple Crisp (egg free, dairy free, with vegan and gluten free options) {Serves 2-4}

Every year at Thanksgiving I would make a big dish of my famous apple crisp... and every year I get stuck with leftovers that would sit in the fridge and get soggy (apple crisp is best served warm and fresh out of the oven, so be sure to seem my notes at the bottom if you need to prepare in advance). It's not that the crisp wasn't good, it is amazing, one of my top requested Thanksgiving desserts, and everyone goes back for seconds! We just don't have a huge family, and in addition to my incredible pumpkin cheesecake, and pies, it was just simply too large of a portion for us. So here is my small-batch version of my original apple crisp recipe. It is perfect for individual mini crisps anytime, or you can make a 8x8 inch crisp in a baking dish and let guest take for themselves. Hope you love it as much as my family does!

Streusel Stuffed Baked Peaches

Here is a great recipe to enjoy the last pickings of peach season. This quick simple play on a peach crisp is the perfect individual dessert for any occasion. Tender baked beaches, stuffed with an oat streusel topping make them a great healthy alternative for a light summer dessert. Enjoy them warm, topped with a scoop of vanilla ice cream to  really kick it up a notch! You can even use canned peaches and enjoy them year round!

Twix Ice Cream Pie Cups

I couldn't decide between candy, ice cream, pie, cookies, and cupcakes... so I decided to create a dessert that captures components of them all and make a Twix candy, ice cream pie in a cookie cup! These Twix Ice Cream Pie Cups have every component of a Twix candy bar, with their shortbread cookie crust, caramel swirl ice cream and chocolate shell. They are surprisingly simple to make and absolutely incredible! The individual size cookie cups make them perfect for serving at a bbq or party, and a lot less messy than trying to cut and serve an ice cream pie.
