When your recipe calls for mashed banana, the riper the better! The ripeness of your bananas will determine how naturally sweet your baked good turns out, so make sure your bananas are extra ripe, and I mean R-I-P-E! Think, covered in brown spots, too ripe to eat, about to throw it away, ripe. That means the banana is at the peak of sweetness, the riper the better! This will ensure the banana is ultra sweet, soft, and packed with a more intense banana flavor, than a regular yellow banana, making them perfect for your recipe.



If you're anything like me, you forget to plan ahead and buy the bananas in advance so they can ripen to the perfect level. This trick will give you perfectly ripe, super sweet and soft bananas for your baking recipes, by releasing their natural sugars in the oven at a low temperature. 



Simply put your bananas on a foil, parchment or silicone lines baking sheet.



Pop them in a preheated 300 degree F oven for about 15-30 minutes, or until the are black and shiny.



Then, mash them up to use in your recipe!



How easy was that?! Depending on how ripe your bananas are to begin with, will determine how long they will take to ripen in the oven. It usually takes the perfect amount of time for me to prepare the rest of my ingredients for my recipe and gets the oven nice and preheated.
