5-Minute Microwave Apple Spice Mug Cake (egg free, dairy free, vegan, with low fat and gluten free options)

This apple spice cake and my single serving banana bread are 2 of my favorite microwave recipes to whip up when I want a quick and and easy treat that is on the healthier side. I've tried tons of microwave recipes, yet not all of them work because they turn out too dry, tough or even rubbery. You need a really moist batter to ensure your baked good wont get nuked by the microwave, that is why I created this recipe using oil instead of butter, with the addition of applesauce to keep it really moist and naturally sweet! The spice gives the cake a wonderful taste of autumn and the cinnamon glaze drizzle really makes you feel like you are indulging... but without the guilt of a mile high swirl of frosting!



To make this single serving treat, simply spray a ramekin (or a large mug) with non-stick spray or skip this part and eat your bread straight from the dish. Combine dry ingredients in a small bowl.


Add wet ingredients to the dry and stir until well combined.


Pour batter into ramekin.

 

Cook in the microwave on 50% power for 60 seconds at a time until done.


Let cool just slightly.


 Remove from ramekin (or eat right out of the dish) and drizzle on cinnamon glaze.


Dig in! 



Even though I am a huge chocoholic, I think I might even prefer this version more than my chocolate mug cake. It is so moist, dense and full of flavor that even one little serving really satisfies! The best part is you can lick the bowl since there is no egg in the batter.


Single Serving Microwave Apple Spice Cake

Yield: 1 ramekin-sized cake (2/3 cup batter)

Ingredients 
  • 4 tablespoons flour
  • 1/2 teaspoon apple pie spice or cinnamon
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 2 tablespoons chopped apple or chopped nuts, optional
  • 1/4 cup natural, unsweetened apple sauce
  • 3-4 tablespoons packed brown sugar
  • 2 tablespoons vegetable oil*
  • 1/4 teaspoon pure vanilla extract
glaze
  • 1/4 powdered sugar
  • 1/4 teaspoon apple pie spice or cinnamon
  • 1 teaspoon milk or water

*May sub half of the oil with equal parts apple sauce, for a low fat alternative.


Directions

Spray a microwave safe 7-8oz ramekin with non-stick spray (or skip this step if you want to eat your bread straight form the dish). In a small bowl combine flour spice/cinnamon, baking powder and salt. Add nuts if desired. Stir in applesauce, sugar, oil and vanilla. Pour batter into prepared ramekin. Microwave on 50% power, 1 minute at a time, for 3-4 minutes, until toothpick inserted comes out clean or with a few moist crumbs. Do not over bake.

To make the glaze, simply stir all ingredients together and drizzle over cake. Enjoy warm.
