Summer is coming to an end and school is back in session, which means time for some fun "Back to School treats"! This year, I was honored to be asked amongst a number of popular dessert bloggers to to participate in the 2012 Back to School Bake-off, hosted by Best Friends for Frosting and Sprinkles & Grins, a website brought to you by Betty Crocker& Cake Mate. We were asked to produce a unique and exciting new recipe or sweet treat that represents "back to school" to us, to inspire you! My first thoughts were "Apple for the teacher" and PB&J, so I knew I had to think of a way to combined the two ideas... and that is how I came up with my "Apple For The Teacher" Hand Pies, Frosted and Stuffed With PB&J. A perfect back to school treat for kids, teachers, friends and classmates.

Summer is coming to and end (even though it is still 85+ degrees here in LA!) and fall is quickly approaching! As I prepare to stock up on pumpkin puree and get my Autumn spices out of the cupboards, here is a quick look back on my favorite summer time recipes and no-bake treats, featuring everything ICE CREAM! Lemon Meringue Pie Dip For Two

For when you don't want to bake an entire pie, this pie inspired, refreshing treat is really simple to make and only needs about 10 minutes in the oven! The luscious, smooth lemon curd is topped with a light, fluffy cloud of meringue topping. Instead of a crust, scoop with cookies or graham crackers for a quick, simple and delicious summer time treat for two. Make it in a bowl to share or in 2 ramekins to serve as individual, single serving desserts! Alternatively, you can sub the meringue topping for a "lite" store bought whipped topping and use low sugar/reduced fat cookies, to guiltlessly indulge in moderation with my small batch, summer time take on a classic dessert.

Award Winning Mini Peaches & Cream Breakfast Pies

Hope everyone is having a wonderful summer! Mine's going just "peachy" ;) I am so excited to announce that I have been chosen as the Wake Up to Johnsonville® Recipe Contest Winner!



When I was coming up with ideas of what to pair with their breakfast sausage for the contest, I knew I wanted to do something on the sweet side. Without fail, every breakfast choice I am given, I go for the sweet choice; a danish over a bagel, pancakes over an omelet, a cinnamon roll over biscuits and gravy. Since peaches were in the prime of their season, I thought they would make the perfect addition to my recipe. To bring everything together I enhanced the Johnsonville® Vermont Maple Breakfast Sausage with some sweet maple syrup and added cream cheese for a sweet and savory peaches and cream mixture. At first I was going to roll the mixture up in crescent but wanted something with more of cute presentation. After my miniature fruit pie recipe/tutorial took Pinterest by storm, I knew this reader favorite would make the perfect presentation. I crossed my fingers and stuffed my sweet and savory mixture into biscuit dough cups topped with a lattice design to resemble adorable little mini pies. They baked up tender and flaky with a perfect golden brown top.

Chewy Peanut Butter Honey Chocolate Chip Granola Bars (no-bake, dairy-free, egg-free, with gluten free option!)

These granola bars are so versatile and sooo addicting! The best part about these is that they are so easy to whip up with no baking required! The bars can also easily be made vegan or  gluten free with a few simple substitutions!
