Magic Flourless Chocolate Cookies - Low Fat, Gluten Free {Small Batch - Yiled: 8-10}

These cookies are like MAGIC! Why you ask? First off, they have no flour (making them gluten free by default), no butter (no added fat), and no egg yolks (no cholesterol). They are made with less than a cup of sugar, a little cocoa powder, an egg white, and some salt and vanilla for flavor. The batter is thin and runny (like chocolate glue), but put them into the oven, and voila!... Rich chocolate cookies with a chewy, fudgey inside and a light, crisp, meringue-like outside... MAGIC! Best part is, they are so easy to make so you can whip them up any time in minutes, for a guilt free indulgence!

Our Cupcake Wars "Battle of the Champs" re-run!

As many of you know, after a nationwide search for the country's top bakers, I was chosen to compete on the series premiere of the Food Network show "Cupcake Wars", in June 2010... AND I WON! I was then asked back to compete on the season 2 "battle of the champions," for a best of the best special episode! DIY Toothpick Engraved Chocolate Bar Holiday Place Settings, Gift Tags & Stocking Stuffers

My Do-It-Yourself hand engraved Holiday chocolate bars are a perfect, quick and simple last minute Holiday treat! After all of the buzz around my Thanksgiving chocolate bar name plate and chalkboards versions I knew I just had  to create a Holiday themed version. I decided to stick with the personalized place settings as well as use them for gift tags, personalized party treats, or a sweet holiday stocking stuffer. They are really great activity for kids to create their own illustrations or message to give to classmates, teachers, friends or family.

Red Velvet Sandwich Cookies {Small Batch - Yield: 6-8}

A twist on the classic red velvet cupcake, perfect for Christmas, Valentines Day, 4th of July, or any special occasion. These soft red velvet cookies with crisp edges are filled with a smooth cream cheese frosting, which can also be tinted with food coloring or rolled in festive sprinkles to match any occasion or holiday!

Red Velvet Cupcakes {Small Batch}

Classic Red Velvet cupcakes with smooth vanilla cream cheese frosting. Get creative and add some peppermint extract to the frosting for Christmas, sprinkles them with heart confetti sprinkles for Valentine's Day or an anniversary, even top them with a blueberry for 4th of July!

After my huge success making my Red Velvet Rose Water Cupcakes on the special champions episode of the Food Network's Cupcake Wars, one of the producers of the show asked me to provide some red velvet minis for a Parisian wedding shower she was hosting. I created some cute fondant toppers to fit the color scheme and decor. For the party, my cupcakes were displayed on a stand next to Cupcake Wars judge, Florian Bellanger's famous macaroons!

These classic cupcakes are simple to make and the frosting is phenomenal! For the cupcakes, simply sift the dry ingredients together to remove any lumps in the cocoa powder.

Beat in butter and oil.

Add half of the wet ingredients and beat for about a minute until smooth.

Add the rest of the wet ingredients until incorporated.

 Add vinegar and baking soda and watch it fizz! Fold it thoroughly into batter.

Scoop batter into pan and bake.

Top cooled cupcakes with cream cheese frosting and decorate!

3 Minute Single Serving Banana Bread (egg free, dairy free, vegan, with low fat and gluten free options)

My microwave mug recipes are some of my favorite desserts to make when I need a quick and easy sugar fix (sometimes I even bake them in the toaster oven when I have a little more time). I've tried tons of recipes, and not all of them work as a microwave version though. You need a really moist batter to ensure your baked good wont get nuked by the microwave, that is why I created this recipe using oil instead of butter, with the addition of banana keeping it really moist! Even though I am a huge chocoholic, I think I might even prefer this version more than my chocolate mug cake! The best part is you can lick the bowl since there is no egg in the batter. And because there is no milk or butter this bread is completely vegan!

Marshmallow Gingerbread Boy (and girl) Pops

After making my tiny little Gingerbread Kid Cakewiches I just had to re create them in pop form. My first idea was to do gingerbread cookie pops, but ended up deciding on making a no-bake alternative like most of my cute and simple pop tutorials. I still wanted the cinnamon ginger taste so I created a way to flavor, color, and assemble little gingerbread boys and girls our of some marshmallows and a sugar & spice mixture! Yup, that's all you need... well, that and some sprinkles for decorating :) They are so cute and couldn't be easier! Make a whole crew of them for your next holiday or Christmas party.

You can find my pops, recreated by Family Fun's real live test family, on page 28 as the featured "Treat of the Month". Always so exciting to see my name published along side my ideas! After making my little Christmas Tree Brownie Bites and Christmas tree cupcakes with lights made of sprinkles, I wanted to create a Christmas tree light treat all it own. While looking at a picture of a Christmas light, the idea came to me immediately... strawberries and mini marshmallows! I now tend to see items and break them up in to shapes that I can match to the shape of a candy or food since I've been blogging so long! Anyway, I was really happy to make these and take a break from the all the baking ans sugary desserts that this time of year brings. These are a great snack to serve at a holiday party and are really tasty!

Marshmallow Cocoa Mug Pops/Hot Cocoa Stirrers

These little mugs of hot cocoa on a stick are a really adorable addition to the holiday season. They are super easy to make, using only marshmallows and some melted chocolate or frosting and decorated with sprinkles. I first created marshmallow mugs with my Green Mug O' Beer Pops for St. Patrick's Day, and then with my Father's Day Beer Mug Pops. They are just so cute I had to find another reason to make them (stay tuned for more fun marshmallow mug variations!). You can eat them off of the stick, or even stir them into your hot cocoa!

3 Minute Single Serving Double Chocolate Chip Mug Cake For One (with egg free, dairy free & vegan option)

"Bake your cake and eat it too" by indulging in moderation with my small batch dessert recipes! This moist double chocolate chip cake, is actually baked in the microwave in under 3 minutes! Too good to be true? Not at all! This recipe took me a long time to perfect. There are tons of "mug cake" recipes out there, but by tweaking ingredients and cook times, I can now share my perfect, late night chocolate craving, savior. It is so easy and really hits the spot when you need a single serving cake fix in minutes. The best part is that you can substitute non-dairy milk of your choice, like soy milk, almond milk or coconut milk, for a completely vegan version! I like to prepare a large batch of the cake mix, to be able to mix together a scoop of mix with the wet ingredients whenever I need a little chocolate fix. This recipe is so versatile, takes only minutes to prepare and is virtually fool proof, so give it a try and let me know what you think!

10 Minute Microwave Peanut Brittle

This quick and easy recipe, for a no fail peanut brittle is the perfect treat to whip up for any occasion. Instead of stirring a hot sugar syrup mixture over the stove, using a candy thermometer to get the mixture to crystallize to the perfect stage, this recipe uses a microwave. It's a great treat to bring for potlucks, holiday parties, or as a last minute sweet gift. Cooking times will vary depending on the watts of your microwave. It should turn a nice golden caramel color, without burning if watched carefully.

Gingerbread Kid Cakewiches

After making my delish gingerbread cupcakes last year, I wanted to make them again but in a different way. Because I like cake and frosting so much more than cookies, instead of gingerbread man cookies, I made CAKEWICHES. Cakewiches are basically a sandwich made of cake and frosting, quite possibly the best sandwich you will ever have! I made adorable little gingerbread boys and girls out of cake and sandwiched them together with creamy vanilla cream cheese frosting. They couldn't be more adorable and they are a great alternative to classic gingerbread man cookies. You can use red and green colored sprinkles, perfect for Christmas parties, or use rainbow sprinkles for a cute Winter treat.
