These soft, fluffy, pancakes are my #1 go-to pancake recipe for a perfect Sunday breakfast. Flourless Peanut Butter Chocolate Chip Cookies with gluten free & vegan options {Small Batch - Yield: 8-12}

November is National Peanut Butter Lover's Month, so before it is over I wanted to share delicious peanut butter cookie recipe with you. This was a really nice break after all the pumpkin, cinnamon and apple recipes jam packed into November.
This recipe is one of the easiest desserts to prepare, because of its minimalist ingredients, one bowl method, and quick baking time. I have this recipe pretty much memorized. The best part is, you can whip these up anywhere, like at your non-baker friend's house, who doesn't have flour in their cupboards or milk and butter in their fridge... but they always have a half jar of peanut butter laying around, some sugar for their coffee, and a few eggs next to last night's left overs in their fridge! The absence of flour in the recipe really lets the peanut butter shine through, and the natural fat in the peanut butter allows the recipe to remain rich and flavorful without adding butter! I like to add chocolate chips, but you can leave them out, or try using crunchy peanut butter for added texture.

Mini 5" Pumpkin Cheesecake With Maple Spiced Whipped Cream {with a DIY disposable 5"-round parchment pan tutorial!}

This is my absolute favorite Autumn dessert! I wait all year to make it specially for Thanksgiving. Last year I made a "non-Dollhouse"/regular sized batch and baked them in a cupcake pan for individual sized cheesecakes, but we had a lot of cheesecakes. It also took the fun out of sinking your fork into a tall, creamy, slice, making sure to get a little of everything on your fork in each bite. So instead, I made my apple crisp into individual sized portions, and decided to make a mini-batch of my cheesecake in a standard springform pan. The only problem was, I only had a regular, 9" springform pan which was way too big for my mini-batch, and knew there was no way of making a standard cheesecake without one... or was there? Here is where I got creative, keep reading to find out what I used for a pan! I'm giving myself a pat on the back for creativity for this one ;) So excited to share with you...

I love to use pumpkin in baking, like my Pumpkin Pancakes, Spiced Pumpkin Seed Brittle, Pumpkin Cupcakes, Pumpkin Caramels, Pumpkin Fudge, and most of all my pumpkin cheesecake! Now, my Pumpkin Pie Bites, I really liked, probably because the ratio of crust to filling is much more my taste. But I have found a way to incorporate more crust into each slice, on top of light maple spiced whipped cream, and still have a flavorful, rich, creamy pie with warm, fragrant autumn spices in a buttery flaky crust underneath it all.

10 Minute Spiced Pumpkin Caramels

After making my 10 Minute Spiced Pumpkin Seed Brittle I had pumpkin seeds left over that I wanted to make something equally simple and delicious. My 10 minute microwave caramels eliminate the need to stand over the stove, stirring and checking your candy thermometer. My simple caramels are soft and delicious, with a pumpkin pie flavor. Cut them into squares and wrap them in parchment or waxed paper for a great gift. They are also perfect for making my Pumpkin Caramel Pops!

I wanted to put a little twist on it, and added some chocolate chips to the cake, and cocoa powder to the frosting to create a pumpkin chocolate chip cake with cocoa cream cheese frosting. You can even multiply the recipe and make single serving individual cakes for all of your guests or family to enjoy! A great Thanksgiving dessert alternative for those not too fond of pumpkin pie.

After posting my Buttermilk Spice Cupcakes With Maple Cream Cheese Frosting earlier today, I thought I would share some super simple Thanksgiving decor to top them! These cupcake toppers were made from only 2 ingredients; caramels and tootsie rolls! I made them out of some extra candy I had from my Pumpkin Pop and Pilgrim Pop tutorials. They are so incredibly easy, and take any Thanksgiving dessert to the next level in cuteness. You can use them to top cupcakes, like I did, or even use them to top your pumpkin pie, or Thanksgiving desserts, for a sweet festive touch.

Besides my Marshmallow Turkey Pops these might just be my favorite Thanksgiving themed pops this year, so I am really excited to share this tutorial with you! An adorable Pilgrim couple, made out of vanilla wafers, marshmallow, and chocolate, how can you not smile when you look at these?! They are reeeeeally cute, and once you have them smiling in your face, it is almost too hard to chomp into them. I was inspired to make these after all the rave reviews I got from my Girl Scout Cookie Pops. But I took them one step further and added a marshmallow this time, since I had some left over from my Pilgrim Hat Pop tutorial posted yesterday. I can't wait to make more versions of them for the upcoming holidays! Mr. & Mrs. Santa Clause... Leprechauns... Princess' & Pirates?! You can transform them into anything, really! With Thanksgiving just around the corner, all week I will be sharing tons of creative, simple and festive treat tutorials with you... But my candy bar name plates are a post I just couldn't wait to share, because I will be "bringing" these to the Food Network's Virtual Thanksgiving Dinner! Last week, Food Network invited food bloggers from around the country to participate in their virtual Communal Table for Thanksgiving dinner, and I was lucky enough to have a seat at their table. The virtual Thanksgiving will basically be a list of recipes for appetizers, sides, salads, breads, mains, desserts and cocktails, by well-known and respected food experts and bloggers... and my candy bar name plates will be there! Many of you saw my WIN on Food Network's Cupcake Wars series premiere, so to be featured on Food Network again is really exciting. I first introduced my original idea of DIY personalized candy bar engravings when I shared my Edible Chalkboard Cookies tutorial. I couldn't believe no one else has ever done this before... or at least blogged about it! It is so incredibly simple and you can use the idea for just about any holiday or party (which I plan to do throughout the year, so stay tuned!) These are a really fun project for kids to create their own customized drawing or inscription.

Homemade Vanilla Cupcakes

It took me a long time to formulate a recipe that yielded a perfect dozen cupcakes with the flavor, consistency and moist, fluffy texture I was looking for. These vanilla cupcakes aren't just any plain Jane, boring vanilla cupcakes, they are light and fluffy due to the whipped egg white that is folded in at the end with a perfect little dome on top. They are extra moist due to the added vegetable oil and packed with flavor from the butter and vanilla. They are sweet with a soft, tender crumb due to coating the flour mixture with the fats in the beginning, to reduce the amount of gluten formation. Pair them with any of my homemade FROSTING recipes for a totally gourmet treat!

After posting a poll on our Facebook page asking what your favorite Fall flavors are, apple was such a close second to pumpkin, that I decided to share my homemade apple pie spice with you. This spice blend is pretty similar to my pumpkin pie spice blend with a few minor tweaks to really bring out the warm cinnimon and nutmeg. It is the perfect for Autumn baking, Thanksgiving pies and cobblers, and Holiday desserts.
