These individual sized deep dish pizzas create a perfect appetizer platter, make an adorable finger food option at parties, a great make-ahead lunch box item, and are a simple and fun 'kid friendly' activity for adults and children alike. The best part is, they are cheap, quick, and super easy to make!

Pizza is my all time favorite food. I like every kind of pizza from delivery, to frozen pizza, to NY style, to deep dish. I like meat pizza, veggie pizza... tomato sauce to bbq sauce; as long as it is extra cheesy! For my mini deep dish pizzas I decided to go with bbq chicken pizza, my favorite restaurant pizza. This alternative is just as gourmet tasting and a whole lot cheaper than dining out! You can choose to stuff your pizzas with any combination of sauces and topping your desire, and can customize the amount of sauce, toppings and cheese to meet your preference.
Mini Deep Dish BBQ Chicken Pizza
Yields
9 mini deep dish pizzas
Ingredients
- olive oil
- 10 oz. refrigerated pizza crust dough
- 1/2 cup bbq sauce, more as needed (I used hickory & brown sugar)
- grilled chicken, tossed in bbq sauce
- red onion
- 1 cup shredded mozzarella cheese, more as needed
- fresh cilantro
Directions
Preheat oven to 450 degrees F. Brush 9 wells, of a standard size muffin/cupcake pan with olive oil.
Roll out pizza crust dough to desired thickness, dough will expand during baking (I stretched my dough pretty thin). Use a large biscut cutter (or rim of a glass) to cut out 9 circles of dough, and press into bottom and up sides of muffin pan.
Spoon a scant tablespoon of sauce onto each dough cup, and spread up sides.
Add chicken and finely chopped red onion or desired "toppings".
Top with shredded cheese. I like a lot of cheese on my pizza, so I really piled it on, but you can use as much as you like, depending on your preference.
Bake for 10 minutes, until edges start to turn golden brown.
Top with chopped fresh cilantro and transfer to wire rack for 2-4 minutes before removing from pan. Serve immediately.

ReplyDeleteI just made these tonight and they were amazing... :D butttt my dough wouldn't stay up on the walls of my cupcake pans. The oil made it so slick that it kept falling down, I improvised so they still turned out deep dish-ish lol. Is there something I can do to fix this though in the future?
ReplyDeleteIt might not be that the oil is making it too slick, but it is probably that when you press the dough up the sides, it stretches and then shrinks back to it's original cut size. You can try cutting larger circles and then stuffing them into the cupcake pan so you wont have to try and stretch the dough while it is already in the pan, since pizza dough tends to shrink right back when you try and stretch it.
