S'mores Brownies

A definite summertime fave, that reminds me of roasting marshmallows of a campfire as a kid, is a good old fashion s'mores recipe. And the only thing better than a chocolate bar, sandwiched between gooey, marshmallowy goodness and a crunchy gram cracker crust... is if that chocolate bar was smushed inside a rich, fudgy chocolate brownie, of course!

S'mores Brownies 

Yield: 12-16 brownies*

*For a mini batch, cut recipe in half and bake in an 8x4 inch loaf pan for about 30 minutes.
*For a large batch, double recipe and bake in a 9x13 inch pan for about 35 minutes.


Graham Cracker Crust:
  • 1 cup graham cracker crumbs
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter, melted
Chocolate Chunk Fudge Brownies
  • 1/2 cup (60g) all-purpose flour 
  • 1/4 teaspoon salt 
  • 1/3 cup semisweet chocolate chunk/chips
  • 2/3 cup unsalted butter, cut into cubes
  • 5oz (142g) semisweet chocolate (may sub bittersweet or dark), chopped or chocolate chips
  • 1/4 cup plus 2 tablespoons unsweetened cocoa powder, dutch process or dark
  • 1 cup granulated white sugar
  • 2 tablespoons vegetable or canola oil
  • 1 1/2 teaspoons vanilla extract
  • 2 large eggs
  • mini marshmallows (for topping)


Preheat the oven to 350 degrees F. Line an 8 inch square pan with foil or parchment paper and spray with non-stick spray.

Prepare Crust:
In a small bowl combine graham cracker crumbs, sugar, and melted butter. Press into bottom of prepared pan.

Prepare brownies: 
In a small bowl combine flour, salt and chocolate chunks/chips; set aside. Melt butter in a small saucepan. Over low heat add the chocolate, cocoa and sugar, stirring until smooth and sugar has started to dissolve. Remove from heat and stir for a about minute to cool mixture. Add the oil, vanilla and eggs one at a time. Stir vigorously for about 1-2 minutes until batter is no longer grainy and becomes thick, smooth and shiny. Gently fold in the flour mixture until just incorporated. Pour batter into prepared pan.

Bake for about 30-35 minutes, or until an inserted toothpick comes out with a few moist crumbs sticking to it. Do not over bake.

Once brownies have baked, remove pan from oven and immediately sprinkle marshmallows over warm brownies (I like to pack on as many as I can!). Set oven to broil and place pan back in the oven for about 30 to 60 seconds or until marshmallows are golden brown. Watch carefully as marshmallows will brown very quickly.
You can also use this recipe to make Mini S'mores Brownie Bites for a fun bite sized treat!

For the brownie bites, I sprinkled some extra crust on top of the brownie batter and baked the brownies in a mini cupcake pan for about 12-15 minutes (make sure to use mini baking cups for easy removal). Top each brownie bite with 1 jumbo marshmallow cut in half, width wise, and broil as directed above.
